Slow Cooker Tomato Pesto Soup

March is certainly coming in like a lion this year. We have had more snow in this past week than we had all winter! As much as I am ready for the Spring, I have to admit that I am very fond of soup season. I can safely say that my family is in agreement with this. Whenever my husband needs a nostalgic, heart-warming meal, his request is always tomato soup and grilled cheese.

When I think of the ultimate comfort soup, tomato is on the top of the list. This one pot, slow cooker recipe is so easy to put together. As it simmers, the sweetness from the tomatoes and onions meld with the kick of basil and pesto. The hearty flavor will far surpass any can of soup you will find in the pantry!

 

The Recipe

 

Prep

You will need a slow cooker for this recipe. Start by chopping the onions and the basil. You will be blending it later on so no need to get fancy, a rough chop will do.

 

Tomato

The base of this recipe is whole peeled tomatoes. Feel free to roast fresh tomatoes if desired to heighten the flavor even more. I prefer the can just for ease and time.

With the whole tomatoes, tomato paste is added to give it another depth of flavor.

 

Basil

I can not get enough of basil. I decided to not only add basil but to also bump up the flavor by adding pesto. Pesto is great for tomato soup because it adds a garlic and nutty aspect to the soup.

Add above ingredients with 2 cups of stock (I used vegetable stock but feel free to use any kind). Cook on low for 6-8 hours or high for 4-6 hours.

 

Blending

To blend my soup, I used an immersion blender right in the slow cooker. I LOVE my immersion blender for soups. You can use it directly in the pot/slow cooker without having to transfer hot liquid into a blender. I HIGHLY recommend it for this recipe. If you don’t have an immersion blender, feel free to transfer soup into blender and blend until smooth. It will be very hot so use caution.

Once blended, add parmesan cheese.

Ingredients

  • 1 medium onion (roughly chopped)
  • 1/2 cup of basil (roughly chopped)
  • 2 28 ounce cans of no salt added whole peeled tomatoes
  • 1 6 ounce can of tomato paste
  • 1/3 cup pesto (I used store bought)
  • 2 cups low sodium vegetable broth
  • 1 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Roughly chop the onion and basil.
  2. Add cans of tomatoes, tomato paste, onion, basil, pesto, and vegetable broth into the slow cooker.
  3. Cook on low for 6 to 8 hours or high 4-6 hours.
  4. Using an emulsion blender, blend until smooth.
  5. Mix in parmesan cheese.
