Meet the Hungry Momma

Hi! My name is Katrina Cox. I am a Registered Dietitian Nutritionist focusing on women’s health and pediatric nutrition. I received my Bachelors and Masters degree in nutrition from the University of Rhode Island and have practiced as a Registered Dietitian for almost 10 years.

Through the years, I have gained a vast knowledge of nutrition throughout the lifespan in various pediatric and adult clinical and outpatient settings. Right now, I am working with clients from a variety of different areas of practice including, but not limited to, weight loss, PCOS and insulin resistance, IBS, pregnancy, and autoimmune diseases.

Prior to my current position, my primary focus was children of all ages. Working as a dietitian with children in hospital settings taught me how to follow the rules and know the calculations and schedules to care for a child. I taught parents that breastfeeding is best, that weaning is to be done with purees, not to feed your baby sugar, and you must feed your baby x ml/kg for your him or her to properly grow. Haha don’t judge me just yet!

Once I became a parent my mindset changed completely. I slowly learned to follow guidelines rather than rules. As long as our baby is happy, healthy, and thriving, we are doing something right!

Being a momma has taught more than anything I could ever learn in a book. I learned that fed is best, babies can dabble in solids by 6 months, it is okay to sneak him a bite of our dessert occasionally, and he will drink as much as he damn well pleases!

Don’t get me wrong, I do my very best to feed Wes balanced and healthy food but I am not perfect. Being a mom is the most rewarding experience but it is not easy! I respect every single one of my fellow momma rockstars no matter their views on parenting. I want to share experiences and knowledge to provide non-judgemental and practical advice and facts for the whole family’s benefit.

 

The Kitchen

I have loved being in the kitchen for as long as I can remember. Growing up, my mother always made a point to involve my sister and I in meal preparations. Whether it is was chopping, mixing, or sneaking a lick of a cake-battered spoon, it was always a family affair. We ate these meals around the table surrounded by laughter and stories of our day.

I am doing my best to continue this tradition with my family. I thoroughly enjoy developing new recipes to ensure well balanced and exciting meals for everyone! This love for food and cooking was the major influence on my decision to become a dietitian and now food blogger!

Ed

The fairy tale all started with a blind date at a local bar. Fast forward four years later to our beautiful wedding on a lake in Massachusetts. Our wedding was everything I ever dreamed of. It was not your typical wedding though! It was equipped with grilled cheese food trucks and taco/nacho bars. Whaaat!? It was amazing!

Disclosure: I am a dietitian but also an avid foodie. Yes, I eat grilled cheese and donuts and no not all my recipes contain kale or quinoa (although some of them may).

Okay back to my husband Ed. He is the most caring and patient man. When it comes to any of my many projects and plans, including this blog, he is always my biggest fan. As I make meal after meal, he sits patiently, waiting for me to take “just one more picture” of his dinner. He even accepts heated over food if it takes enough time to get that perfect shot. I think I will keep him around!

 

Penny

A years later, we turned our family from 2 to 3 when we adopted our Penelope “Penny” girl on a whim at a pet adoption event. She came to us at a hard time in our lives; the loss of a pregnancy. Penny was exactly what we needed to fill the terrible void that we had. She saved us as much, if not more than we saved her.

Penny’s talents are barking, cuddling, and cleaning up after her Momma (and Wes) in the kitchen!

 

Westley

The following year our family became complete with the birth our beautiful baby boy Westley James, our rainbow baby. He is the true motivation behind this blog. We are in awe every day that we brought such a sweet and happy little boy into this world. Watching him soak everything in and learn something new almost daily is truly amazing. I get so much joy out of making him healthy foods and watching him lick, sometimes literally, his plate clean.
