Gluten-Free Oatmeal Pancakes

Today is a snow day here in New England to cap off our long weekend. What should we do?? We could go outside and play…

Nope, not a fan! haha. This picture was taken up in beautiful Maine. It was his first ever snow. His father and I love going up there in the winter and we thought Wes would too but we were very wrong. lol Hopefully for his sake he will learn to love it because living in New England he is in for a lot. So instead of playing outside, looks like our only option is to bundle up, watch cartoons, and eat PANCAKES!

Pancakes stacked high, loaded with toppings such as nuts and fruit and drenched with pure maple syrup! YUM. Have I gotten your attention yet?? I am salivating just explaining it. Pancakes are the ultimate comfort food in my book!

These pancakes are super light and fluffy. They are made with oatmeal flour making them a great whole grain pancake which is also gluten-free friendly.

 

 

The Recipe

 

Oat Flour

The flour used in this recipe is oat flour. You can either buy oat flour or make it yourself. It is SO easy to make.

  1. Simply use a food processor or blender and blend up your favorite oatmeal (I used old fashioned oats) until powder consistency.
    • The ratio of oat to oat flour once blended is usually 1:1 (ie. 1 cup oats = 1 cup flour).
  2. Store it in a air-tight container.

 

Making Fluffy Pancakes

To make a fluffy pancake, it is important not to over mix the batter. Mix the dry ingredients together and separately mix the wet and mix only until combined.

To make the fluffiest pancakes, my secret is in separating the eggs. Add the yolks to the wet ingredients and place the whites in a stand mixer or separate bowl. Whisk with stand mixer or hand mixer until soft peaks form. Mix the wet and dry ingredients together until combined. Then take the egg whites a fold in. Your batter will almost double in size!

Ingredients

  • 2 cups oat flour (see above for directions)
  • 3 teaspoons baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoons salt
  • 1 cup milk
  • 2 eggs (separated)
  • 2 teaspoons vanilla
  • 3 tablespoons butter (melted)

Instructions

  1. In a large bowl, sift together the flour, baking powder, salt and sugar.
  2. Pour in the milk, egg yolk, and melted butter; mix until smooth.
  3. In a separate bowl of stand mixer, whip egg whites until soft peaks form. Fold into batter.
  4. Heat a lightly oiled griddle or frying pan over medium high heat.
  5. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
