Easy Chocolate Hummus

Happy Valentine’s Day! This year I have not one but TWO Valentines, my husband and the cutest little red-head! I am so lucky!! Instead of going out this year, we decided to stay in, cuddle and have some yummy treats!

So I am assuming that most of you have tried the typical tahini style hummus. But have you tried dessert hummus yet? It has become more and more popular lately; from cookie dough hummus, to chocolate hummus, to even cake batter hummus!

Some of you may see this recipe and think grosss! but believe me you are missing out. I promise you that if you try this recipe, your mind will be blown! It is creamy and delicious and the perfect pairing with fruit or graham crackers.

 

The Recipe

This recipe is so simple and only takes a couple minutes to make!

You will need a food processor or blender. Simply start by adding a can of mostly drained chick peas (leaving a couple tablespoons of the aquafaba). Next add the melted coconut oil, powdered sugar, cocoa powder, and vanilla extract and pulse until completely combined and smooth. You may need to scrape the sides with a spatula half way through to combine.

 

What the heck is aquafaba?

Aquafaba is the liquid in a can of chickpeas. This liquid (while containing no protein as an egg does) can be whipped up into a meringue just as you would with egg whites. It makes a great vegan egg substitute in baking and is great for those with an egg allergy.

By adding aquafaba in this recipe, you are adding a stabilizer, making it nice and creamy.

This recipe is vegan friendly as well as gluten-free. The chick peas offer a great source of fiber and protein. Beans and legumes can help lower CRP levels which is a major inflammation indicator. This recipe is also low sugar and great for all ages! Pair with some fruit to make it a delicious, well-balanced snack/dessert!

Ingredients

  • 15.5 ounce can of chickpeas (mostly drained)
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons confectioners powdered sugar
  • 2 tbsp coconut oil
  • 3 tablespoons dark unsweetened cocoa Powder

Instructions

  1. Mostly drain chickpeas, leaving a few tablespoons of liquid in the can.
  2. Add chickpeas with leftover liquid, vanilla extract, confectioners sugar, melted coconut oil, and cocoa powder to the food processor.
  3. Pulse on high for about 5 minutes or until completely combined. Serve with fruit.
