Who Loves double chocolate chip muffins? You must be thinking, I thought this was a healthy food blog!? Well fear not, these Double Chocolate Avocado Muffins are made with avocado and naturally sweetened with maple syrup. They are are so delicious and packed with nutrition!
Recipe
Preheat oven to 400 degrees F. Line muffin tins with silicone or paper liners. I pretty much preach silicone liners every time I make a muffin recipe! They are super easy to clean and the muffins come out without any trouble! I use them is so many of my recipes. Here are a couple of my favorites!
Dry Ingredients
I am using oat flour for these Double Chocolate Avocado Muffins. Feel free to use whole wheat white flour or all purpose flour. I love oat flour because it makes the recipe full of fiber and is even gluten-free! It is so easy to make oat flour and you can use it 1:1 to all purpose flour.
In a medium bowl, combine flour, baking soda, baking powder, salt, and cocoa powder.
Wet Ingredients
First step is to find the perfect ripened avocado.
How do I Chose the Right Avocado?
Make sure the avocado is ripe. How do I know if my avocado is ripe? Good question. They key to figuring this out is to look under then stem.This is the cap that is on the top of the avocado.
- Ripe avocado – If it is easily to peel back and light green underneath, you have yourself a ripe avocado.
- Too Ripe Avocado – If it is brown underneath, the avocado is too ripe.
- Not Ripe Enough Avocado – If it doesn’t easily peel back, then it is not ripe enough.
Once you find the perfect avocado, mash it with a fork and mix with oil, egg, maple syrup, vanilla extract, and milk. Combine the ingredients and fold in the chocolate chips. I used Ghirardelli 60% cacao chips in this recipe. Bake for 20-25 minutes or until center comes out clean.
What is Cacao Anyways?
Cacao are the seeds from a small tropical American evergreen tree, from which cocoa, cocoa butter, and chocolate are made. It is the purest form of chocolate so there is no added sugar on milk solids added to it. For my recipe I used a chocolate with 60% cacao. It is not in it’s purest form but it cuts the calories and sugar content. Feel free to use cacao nibs to cut the sugar even more.

The primary fat used in this recipe is avocado. Avocados are packed with soluble fiber and omegas. They are great for lowering bad cholesterol and for GI health. They are also a great food to help with inflammation. The sweet components are natural maple sugar and lower sugar chocolate chips.

- 3/5 cup skim milk
- 5 ounces (1/2 bag) 60% cacao chocolate chips
