When I think about Spring and Easter time, I automatically think of brunch season. Is there such thing as brunch season? I guess brunch is appropriate any time of the year, but as the weather gets warmer and sunnier, why not start the day with quiches, frittatas, waffles, mimosas, and bloody marys?
One of my go-to brunch options are frittatas. I love frittatas because you can take whatever you have in fridge, mix it with some cheese and eggs and have a quick and easy meal. Leftover meats and on their way out veggies are the perfect ingredients for frittatas.
Frittatas are not just a breakfast item either. I was just watching Rachael Ray and she mentioned the term BLD meals; Breakfast, Lunch, and Dinner. This certainly is a BLD meal. Have in morning, as a leftover for lunch or as breakfast for dinner. After a long day at work, sometimes breakfast for dinner is the way to go!

The Recipe
I made my frittata in a cast iron skillet. Feel free though to cook on a sheet pan, casserole dish, or even muffin tins. Check out my Spinach and Feta Egg Muffins for a mini frittata recipe.
The Base
The base is comprised of eggs and reduced fat cream cheese. Traditionally, the base is made up of eggs and milk. For my fritattas though, I like to replace the milk with reduced fat cream cheese. You are still getting the dairy, but I think it makes it super creamy using cream cheese.
In a medium bowl heat reduced fat cream cheese in the microwave for about 30 seconds until warm but not steaming. One by one, whisk in 12 large eggs. Make sure to slowly whisk in the eggs to avoid scrambling. Mix in the shredded mozzarella cheese.
The Filling
In a cast iron skillet on medium heat, saute 2 chopped shallots, 2 tbsp chopped fresh sage, and 4 ounces turkey breakfast sausage. Add salt and pepper to taste.
Preparation
Preheat oven to 375 degrees F.
Pour egg mixture into the skillet with veggies and sausage. Cook on stove top for 1 to 2 minutes.
Place in preheated oven for 10 to 15 minutes. Remove from oven and let sit for 5 minutes. If you’d like (highly recommended) rip pieces of burrata and scatter on top of frittata.
Burratta cheese is very similar to mozzarella but the inside is creamy. It is a perfectly creamy topping to frittatas, bruscetta, pastas, or even pizzas.
Alternative Preparation
To make these into muffin cups, reduce heat to 350 degrees F and disperse mixture into 12 wells. Make sure to generously oil the nonstick muffin tin or use my all time favorite silicone muffin cups! Cook for 20 minutes.
