Slow Cooker White Chicken Chili

Out of all the #national [insert food] days, one of my favorites has to be National Margarita day. So when I remembered last week that there was a day honoring my favorite adult beverage, I obviously had to celebrate. Even mommas deserve some cocktail time!

Considering it was dreary winter’s day, I thought what better to pair my drink with than a nice bowl of white chicken chili. My slow cooker white chicken chili is a creamy, slightly sweet, and mildly spicy. Best of all, it is so easy to make!

This chili is perfect for any occasion; girls night, tailgating, or just a night in with the family. No matter where this chili goes, it is sure to be a crowd-pleaser.

 

The Recipe

This recipe is prepared solely in the slow cooker. Throw in all the ingredients and let it do its magic. The only prep work that you need to do is chopping the onions and cilantro.

Season the chicken breast with onion powder, garlic powder, and cumin then place the chicken in the slow cooker. Add in drained and rinsed beans, corn, green chilis, salsa verde, diced jalapenos, onion, cilantro, chicken stock. Cook on low for 6-8 hours or high for 2-3 hours.

After 6-8 hours, the chicken should easily fall apart/shred. Remove chicken from the slow-cooker and shred with fork or meat shredder. This meat shredder is perfect for BBQ aficionados.

Mix in the juice of one lime and reduced fat cream cheese and mix until melted and well combined.

Once cream cheese is fully melted, add back chicken and cook on low for an additional 10 minutes. Add in salt and pepper to taste and you are good to go!

 

Toppings

There are many ways to dress up your chili. These are a few of my favorite toppings:

  • Sliced jalapenos
  • Avocado
  • Lime
  • Cilantro
  • Cheddar cheese
  • Sour cream or non-fat Greek yogurt

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon onion powder
  • 1 medium onion (chopped)
  • 12 ounce bag of frozen sweet corn
  • 15.8 ounce can of Great Northern beans, unsalted (drained and rinsed)
  • 15.8 ounce can of Cannellini beans, unsalted (drained and rinsed)
  • 1/2 cup chopped cilantro
  • 4 ounce can green chilis
  • 4 ounce can of diced jalapenos
  • 1/2 cup salsa verde
  • 4 cups low sodium chicken broth
  • Juice of 1 lime
  • 8 ounce reduced fat cream cheese
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from chicken breasts and season the chicken breast with onion powder, garlic powder, and cumin. Place the chicken in the slow cooker.
  2. Add in drained and rinsed beans, corn, green chilis, salsa verde, diced jalapenos, onion, cilantro, chicken broth. Cook on low for 6-8 hours or high for 2-3 hours.
