I decided to make the decision to take a quick break from blogging this past week for my sanity and to give Wes all the love and attention he deserves on his 1st birthday! HOW is my baby one??? People say to me all the time “don’t blink” and “it goes by so fast.” Typically I brush those comments off but my GOD does it go by fast!
For our first day off together after all the birthday craziness, I wanted to make him one of his favorites; Peanut Butter and Jelly French Toast Roll-ups. If you like French toast sticks and peanut butter and jelly, then you will absolutely LOVE these simple and delicious roll ups.
The idea for these came about from our favorite Irish pub. They have a dessert called the PB&J bomb. Granted their dessert is deep fried, coated with cinnamon and sugar and served with ice cream. As much as I would like to completely replicated and eat those every day, I thought I would lighten it up haha
The Recipe
The Bread
For this recipe, I used whole wheat bread. Feel free to use any bread you’d like.
Using a rolling pin, flatten eight slices of bread. I left the crust on but if you prefer, cut the crusts and then roll out.
The Filling
The fillings I used were natural peanut butter and all natural strawberry jelly. There are so many combinations you can use for this recipe! Be creative and change it up!
Spread about 2 teaspoons of peanut butter on the top half of the bread and 2 teaspoons of jelly on the bottom. Roll up the bread, jelly end first, so that the peanut butter can act like a glue.

- Various jellies/jams
- Nutella
- Cookie butter
- Marshmallow Fluff
- Various nut butters
- Sun butter (prefect for those with nut allergies)
French Toast
In a shallow bowl, mix together 2 eggs, 1 tablespoons of milk, and 1 teaspoons cinnamon.
Dip the sticks into the mixture until completely coated. Place into a buttered non-stick frying pan. Rotate every couple of minutes until the entire roll is cooked and there is no raw egg left.
If you wish, sprinkle with cinnamon and sugar or drizzle/dunk with pure maple syrup.

These peanut butter and jelly roll ups are made with natural peanut butter. This means that it doesn’t contain any hydrogenated oils (oils that can cause inflammation and elevate bad cholesterol levels). I made sure to use natural jelly as well, containing no high fructose syrup. As always the whole wheat bread provides a good source of fiber that is perfect for a healthy GI health and inflammation.

- If you wish, sprinkle with cinnamon and sugar and serve with pure maple syrup
