Homemade Whole Grain Cheese Crackers

Ahh Cheez-its, what can I say about Cheez-itz? I am not sure if this is a thing, but if you haven’t had them you are most definitely missing out! If you have had a Cheez-its however, you know that they are crunchy bites of cheesy goodness. If you continue to follow my blog, you will quickly learn that cheese is in fact my favorite food; mmm mac and cheese, grilled cheese, cheese sticks, I am drooling people!

This is probably why I love Cheez-its so much! So i decided why not try and bake them? The dough for these crackers came together in seconds and I used only THREE ingredients!

The Recipe

Make the Dough

To make the dough you will need a food processor and a cheese grater. If your food processor comes with a grater than it will make life even easier.

  • First the cheese- grate an 8 ounce block of cheese ( I like using the block because there aren’t any anti-caking agents to effect the dough)
    • I used sharp cheddar but feel free to use any flavor you’d like!
  • Then the butter – cube a 1/2 stick of butter (cold)
  • And the flour- I used whole grain flour (1/2 cup oat flour and 1/2 cup whole wheat flour) but any will work

Add each ingredient to the food processor and pulse until pebbles start to form.

 

 

Once you get to this consistency, add 2 tablespoons of iced water, one at  time until it form a dough. If it doesn’t seem to be coming together, add another tablespoon.

Wrap in plastic wrap and refrigerate for 1 hour.

 

Roll it

After the dough is chilled, roll out to about 1/8 inch thick. No need to flour the table.

Cut crackers to the desired size. I made mine small to make it an easy snack for Wes (about 1″ by 1″). This made around 300 crackers!! I used a knife but there are cool crimping tools you can use too to make them look more like a Cheez-its. Also if you’d like, poke a whole in the middle of each cracker.

 

Place them on a silicone baking mat or parchment paper. I am so in love with my silcone mats for baking! Nothing sticks and clean-up is a breeze. I HIGHLY recommend investing in one. Cook at 375 degrees F for 12-15 minutes.

These cheese crackers are way less ingredients than cheez-its. That means less preservatives! They are also whole grain making them a good source of fiber. They are low sodium and perfect for all ages.

Ingredients

  • 8 ounces sharp cheddar cheese block
  • 4 tablespoons (1/2 stick) of unsalted butter (cold)
  • 1 cup whole grain flour (or any flour you desire)
  • 2 tablespoons of ice cold water

Instructions

  1. Pre-heat oven to 375 degrees F.
  2. Using a shredder or attachment to food processor, shred block of cheese.
  3. Cut 1/2 stick of butter into 1 inch cubes.
  4. Add cheese, butter, and flour into the food processor and pulse until pebble-like texture. One tablespoon at a time, add water and pulse until dough forms. If needed, add additional tablespoon of water.
  5. Wrap dough with plastic wrap and refrigerate for 1 hour.
  6. Roll out dough 1/8 inch think and cut into 1x1 inch squares. May poke hole in the middle (optional).
  7. Place on silicone mat or parchment paper and bake at 375 degrees F for 12-15 minutes.
  8. Let sit for 5-10 minutes and store and air-tight container.

Notes

Change the type of cheese to switch up flavors!
