Open your lunch box. What’s in there? A salad? Turkey sandwich? These are the top lunches that my clients tell me they eat from day to day. Varying up lunches can be a real struggle for some people. There are only so many turkey sandwiches and grilled chicken salads a person can have!
So why not spice up the type of sandwich you make? One of my favorite sandwiches is willow tree chicken salad sandwich. There was an deli by my college that served the most amazing wrap called the wicked willow. OMG was it good! That was until I learned the amount of fat and added sugars that was in this chicken salad!
So how can you make a delicious chicken salad without the fat and sugar you ask? Make it with pesto and Greek yogurt! I promise you will not miss the mayo!

The Chicken
The easiest way to make this chicken salad is to use a rotisserie chicken.
I LOVE rotisserie chicken! It is the best short cut for so many meals including:
- Chicken salads
- Dips
- Tacos
- Just eating it and pairing with a starch and vegetable!
If you don’t have a rotisserie chicken on hand though, feel free to boil, bake, or cook in a instant pot if you prefer.
Whichever chicken you choose, shred up about 2 cups (around 1 lb) of it with a fork or meat claws. A hand mixer also works great to shred meat! Just place the cooked meat in a bowl and mix away. It will shred in a flash! Make sure not to shred the pieces too fine though. It tastes better with some chunks.
The Mixture
Chop up a stalk of celery and green onion into small pieces. Add it to the chicken. Mix in non-fat Greek yogurt and 3 tablespoons of pesto.
Serving your chicken salad
This chicken salad makes a great sandwich or wrap. You could also serve over salad or as a dip with crackers and veggies.
Additional Toppings:
- Sweeten it up by adding fruit, raisins, or craisins!
- Substitute 1/2 of an avocado to replace 1/2 the yogurt
- Add veggies such as red onion, tomatoes

Store refrigerated in air tight container for up to 4 days.

Store bought chicken salad is typically loaded with fat from mayo. This means tons of saturated fat. Many times sugar is also added. This recipe cuts the fat and does not contain any added sugars! A great meal for everyone!

Ingredients
- 1 pound cooked chicken breast
- 3/4 cup non-fat Greek yogurt
- 3 tablespoons pesto (I used store bought)
- 1 celery stalk (diced small)
- 2 tablespoons of chopped green onions
- Salt and Pepper to taste
Instructions
- Shred chicken with fork, hand shredder, or hand mixer.
- Chop celery and onion and add to chicken. Combine with pesto and Greek yogurt. Salt and pepper to taste.
